Beef is excellent in a casserole and you can get allot of vegetables in there too and so a beef casserole can make a very tasty and healthy meal. Be sure to choose lean beef as some beef can be quite fatty and most supermarkets do a lean casserole beef that is already cut into cubes which makes things easier. The basic recipe also only contains 3 different vegetables but you can add others such as carrot or runner beans to get more goodness.
IngredientsAround 600g of Lean Casserole Beef,A Dash of Olive Oil, 2 Cloves of Garlic, 1 Large Onion, Around 100g of Mushrooms, Half a teaspoon of cayenne pepper, 1 teaspoon cumin, 1 teaspoon coriander, 2 teaspoons paprika, 3 tablespoons tomato puree, 1 Pint of Beef Stock, 2 peppers, any colour. |

Method1. Cut the beef into cubes and then place in the stockpot with a dash of olive oil on the hob and brown.2. Slice the onion and crush the garlic and then add to the beef and soften. 3. Reduce the heat and then add the cayenne pepper, cumin, coriander, paprika and tomato puree making sure that you stir it well. 4. Pour in the beef stock and stir well and then add the chopped peppers and mushrooms. 5. Put the lid on and then place in the oven at 180°C for around 2 hours. 6. Serve with mixed vegetables or you can add some other vegetables such as carrot or beans to get the vegetable content up. |
