Lamb is always a favourite and this lamp chop casserole is an excellent way of enjoying lamb with a good amount of healthy vegetables. The original recipe stated coriander as the garnish but I simply have to have mint with lamb and so the choice is yours.
IngredientsA Dash of Cooking Oil,6-8 Lamb Chops, 2 Large Onions, 3 Red Or Green Peppers, 1 Tin Chopped Tomatoes, 1 Tin Kidney Beans, 1 Beef Stock Cube, Salt And Black Pepper To Taste, Coriander or Mint to garnish. |

Method1. Grill the Lamb chops for 6-8 minutes on each side until browned.2. In the casserole dish add the oil and then add the onions and cook until browned and then add the peppers and cook for a couple of minutes. Then add the salt and pepper to taste. 3. Reduce the heat on the hob and add the tomatoes and kidney beans. 4. Dissolve the beef stock cube in half a cup of boiling water and then add that to the casserole. 5. Add the lamb chops to the casserole and then add the lid to the casserole dish and cook in the oven for 30 minutes at 180°C. 6. Add the coriander or mint just before serving. |
