Minted Lamb Casserole

Lamb and mint were made for each other and this casserole uses mint to create a beautiful taste. It also has lots of other vegetables and so is packed with goodness.

Ingredients

500g Lean Diced Lamb,
A Dash of Olive Oil,
1 Large Onion,
1 Garlic Clove,
1 Tin Chopped Tomatoes,
1 Courgette,
1 Carrot,
1 Green Pepper,
1 Tablespoon Tomato Paste,
1 Tablespoon Worcestershire Sauce,
2 Cups Beef Stock,
1 Packet Fresh Mint.

Method

1. Add the Lamb to the stockpot with a dash of olive oil on the hob and brown.

2. Add the chopped onion and crushed garlic and brown.

3. Add the chopped tomatoes, tomato paste, Worcestershire Sauce and beef stock and bring to the boil.

4. Place in the oven at 180oC and cook for around 1 hour.

5. Add the carrot, courgette and green pepper (all chopped how you like) to the casserole and cook for a further 10 minutes.

6. Stir in the fresh mint (stalks removed) and serve.
