Chicken Pasta

This recipe for pasta is very easy to make and includes lots of vegetables and chicken and so is also very healthy. You can choose whatever type of pasta you prefer, the whole wheat pastas are better for you but the standard pasta is also quite healthy. The ingredients listed below are a rough guide only and so you can easily more or less of each if you prefer, for example if you are looking for more protein then add more chicken of if you really like a particular vegetable then add more and it will be fine (if you end up allot more ingredients then just add more pasta sauce).

Ingredients

Around 300g of Pasta,
Around 300g of Chicken Breast,
A Dash Of Olive Oil,
2 Cloves of Garlic,
1 Large Onion,
2 Peppers (any colours),
Around 200g of Mushrooms,
Around 200g of Cherry Tomatoes,
Sweetcorn,
1 Jar of Quality Pasta Sauce.

Method

1. Add the oil to the stockpot and heat to a medium to high temperature.

2. Chop the chicken breast into strips or small pieces and then add to the stockpot and brown on all sides.

3. Chop the onions and garlic and then add to soften.

4. Chop the peppers and mushrooms and then add to soften.

5. Add the cherry tomatoes (cut into halves) and the sweetcorn and cook for a few minutes.

6. In a separate pan cook the pasta and then drain (do this earlier if it is not quick cook pasta).

7. Reduce to temperature in the stockpot and add the pasta sauce giving it a good mix. If you like it with more sauce then you can add some more or a tin of tomatoes does a good job of adding to the sauce. Or for a top quality sauce consider fresh pasta sauce but this does cost more.
