The sausage casserole is one of the tastiest casseroles that you can make because the sausage has such a distinctive taste that emanates through the whole casserole as it cooks. Use low fat sausage for the most healthy option or if you feel like a treat then use some premium sausages but bear in mind that these will have more fat. You can also omit or change some of the vegetables for taste, the more you include the better and most will taste good in casseroles.
IngredientsA Dash Of Cooking Oil,1 Packet of Sausages (6-8), 2 Large Onions (I use 1 red and one white), 2-3 Cloves Of Garlic, 2 Tins Of Chopped Tomatoes, 2 Tins of Beans (You can choose the types, the supermarkets offer lots of different types of tinned beans (not baked beans!)), 2 Red or Green peppers, 1 Carrot, About 100g of Cherry Tomatoes, About 100g Mushrooms, About 100g Fine or Runner Beans, A Dash of Red Wine. |

Method1. Add the oil to the stockpot and heat to a medium to high temperature, also turn on the oven at 170°C for a fan oven or 180°C for a standard oven.2. Chop the sausage into bite size pieces and then add to the stock pot browning on all sides, stirring occasionally. 3. Chop the onions into strips and crush the garlic and then add them and cook until softened, stirring occasionally. 4. Add the red wine and allow to cook for a couple of minutes, stirring occasionally. 5. Reduce the temperature to a low heat and then add the chopped tomatoes. 6. You then add all of the other vegetables, chopped how you like. If you add allot of vegetables and it becomes too dry then you can add another tin of tomatoes or you can add some beef stock to give it a more traditional, gravy like taste. 7. Put the lid on the stockpot and place it in the oven and leave it there for a good 2 hours. You should check it occasionally, to stir it and make sure it is not cooking too intensively, if so reduce the temperature a little. |
